I cooked cow tongue a few days ago by request in a special way.
1. put salt about 1"deep in a pan.
2. wrap the meat with aluminum foil and place on salt with cover
3. cook with low heat 30-40min
For this way, you have no smoke and less dish washing. Hahaha.

As far as I know most of asian people love this oily & chewy part of meat but typical American people never like and enjoy it. It has to be tender but texture.
They would say "UUUUUeeh! Gross!
For that reason, cow tongue is much cheaper in America.
Lucky live in Hawaii.
